This tea has always been associated with an image in my mind - I walk into a temple, sit down, and a monk comes out and serves me this tea. Kam is told that Tou tea gathers "chi". Monks drink it for that purpose. Hmm, Kam takes it as another unconfirmed story.
This tea was raw (unprocessed) when it was compress into it's cake shape. It's left to ferment in the years to come. The tea cake you see is now 3 years old and just ready for use. The longer it is kept, the better it gets.
